So, what do you do when you love rainbows but cannot find any when you look at the sky? Exactly, you make your own. Any day can be a rainbow day.

You can find the recipe I use for cookie dough and icing in my blog archives. Cookie dough + bowl for big outer circle + small glass for tiny inner circle / cut through half by a knife = rainbow shape.

You are allowed to do rainbow cookie happy dances. If you plan to take pictures of your colourful creations, be sure to make more cookies than you intend to photograph. It’s commonly known that during rainbow cookie photo shoots, some cookies magically disappear in the process.
